FlavorMaxx started with a gyro shop. There's a place in my town whose gyro is so good I was ordering it three times a week — which is not a sustainable financial plan when you eat as much protein as I do. So I got obsessed with a stupid-sounding mission: make cheap ground beef taste like their gyro meat. The first batch was bad. So was the tenth. I bought a scale, started weighing every spice, and cooked the same pound of ground beef over and over, changing one thing at a time. At some point I walked into the shop and straight up asked the owner what was in it. He laughed and told me nothing, which was fair.

Months of batches later, I put my ground beef next to their gyro meat in a side-by-side and mine won.
